The Fuji apple is an apple cultivar developed by growers at Tohoku Research Station in Fujisaki, Aomori, Japan, in the late 1930s, and brought to market in 1962. It originated as a cross between two American apple varieties—the Red Delicious and old Virginia Ralls Janet (sometimes cited as “Rawls Jennet”) apples. According to the US Apple Association website, it is one of the 9 most popular apple cultivars in the United States.[rx] Its name is derived from the first part of the town where it was developed: Fujisaki[rx].

Fuji is an alluring apple variety characterized by pink speckled flush over a yellow to green background. The color ranges from light pink to crimson pink. It is juicy, crisp with dull white flesh. It possesses a refreshing and sweet flavor. Being a late-ripening apple variety, Fuji apples are available during November/December (in the northern hemisphere) and May/June (in the southern hemisphere). Generally, Fuji apples are round, large to very large about 75 mm in diameter. It consists of 9 to 11% sugars by weight and has dense, sweeter, crisper flesh than other apple cultivars. These apples have long shelf life than others even without being refrigerated. When refrigerated, Fuji apples could remain fresh for up to a year.
In 2016 and 2017, about 43 million tons of Fuji apples were grown. When introduced to the U.S. in the 1980s, Fuji apples got popular with American consumers. It is grown in states such as New York, Michigan, Washington, and California. About 135000 tons of Fuji apples are grown in Washington state each year.
