Gulf Sturgeon/Sturgeons are elongate, with a flattened head and snout, and seem to be five-sided. This is because they have five rows of bony plates running along the body, one along the back, two on the sides and two on the underside. The plates are sharp in young fish, but smooth with wear in older, larger fish.
Sturgeon is the common name for the 27 species of fish belonging to the family Acipenseridae. The earliest sturgeon fossils date to the Late Cretaceous, and are descended from other, earlier acipenseriform fish who date back to the Triassic period some 245 to 208 million years ago. The family is grouped into four genera: Acipenser, Huso, Scaphirhynchus, and Pseudoscaphirhynchus. Two species (A. Zaccaria and A. dabryanus) may be extinct in the wild, and one (P. fedtschenkoi) may be entirely extinct.[3] Two closely related species, Polyodon spathula (American paddlefish) and Psephurus gladius (Chinese paddlefish, possibly extinct) are of the same order, Acipenseriformes, but are in the family Polyodontidae and are not considered to be “true” sturgeons. Both sturgeons and paddlefish have been referred to as “primitive fishes” because their morphological characteristics have remained relatively unchanged since the earliest fossil record.[rx][rx] Sturgeons are native to subtropical, temperate, and sub-Arctic rivers, lakes, and coastlines of Eurasia and North America.[rx]

Atlantic Sturgeon
The Atlantic Sturgeon lives along the northeast Atlantic coast. This species is more long-lived than the others, commonly reaching over 60 years of age. The lifespan of Atlantic Sturgeon strongly correlates with how far north or south they live. The Atlantic sturgeon in adulthood can reach lengths between 12 and 14 feet. They feature a blue-black or gray upper body that contrasts with a white outline on its rows of body plates, the paired fins, and the lower tail fin portion. Gulf Sturgeon
The Gulf Sturgeon is a subspecies of the Atlantic Sturgeon found along the Gulf Coast. Native populations live in the Suwannee and Florida panhandle river systems. The Gulf and Atlantic sturgeon look so similar that the only reliable way to tell them apart is with DNA analysis. Like the Atlantic sturgeon, this species grows between six and eight feet long and exceeds 200 pounds. Shortnose Sturgeon
The shortnose sturgeon lives along the northeast Atlantic Coast and has been found in the St Johns River, though recent research indicates their overall occurrences here are infrequent. This sturgeon fish species averages closer to 30 years of age but have reached ages over 67. These sturgeons are also smaller than the other two North American Sturgeons. They grow about three to four feet in length. This sturgeon is a darker-hued fish, with a back that’s black or brown and a yellowish belly, paired fins with white outlines, and side scales lighter than the general body color. Sturgeons are the member of the Acipenseridae family including two dozen different species. Generally, sturgeons are solitary which spends a number of years at sea before they return to a river where they were born for breeding. Scientifically known as Acipenser sturio, the European sea sturgeon is a sturgeon species found on the coasts of Europe. This species is also called Atlantic sturgeon, Baltic sturgeon, Common sturgeon, European sea sturgeon, European sturgeon, and Sea sturgeon. Currently, it is an endangered species. This sturgeon has a wedge-shaped head ending in a long point. It has sensitive barbels on the facial area. The body has dorsal fins which are located very far. The diet is followed by crustaceans and mollusks. The fish could measure 6 m (20 ft) and weigh 400 kg (880 lb) but the common length is 1.25 m (4 ft 1 in). It can reach 100 years of age with late sexual maturity (16 to 18 years for the females and 12 to 14 years for the males). It is found on the coasts of Europe excluding northernmost regions and rarely in the Atlantic Ocean to the coasts of North America. European sea sturgeon is one of the largest European fish to breed in rivers. It has an olive-black upper body with a white belly. The body is elongated tapering to a narrow pointed tip at the snout and inadequate scales excluded five rows of whitish bony platelets and scutes that run length of fish. Lifecycle
- Adults migrate to large rivers in spring and early summer. The spawning takes place between March and August. The number of spawned eggs increases with age. The sticky dark grey eggs require one week at 17°C for development. It is considered that females spawn every 3-4 years and males every 2 years. Size
- Sturgeon fish young grow rapidly, maturing to between seven and ten feet in adulthood for most species. Fishes found in North America attain around 3 to 10 feet, weighing close to 500 pounds, and there have been specimens observed at nearly 26 feet, but these are rare.
- The rock or lake sturgeon, occurring in the Great Lakes, the Mississippi River, and Canada, can weigh up to 200 pounds or more. The largest of the North American sturgeons is the Sacramento, Oregon, or white sturgeon, a pacific coast inhabitant that can weigh over 1,750 pounds.
Appearance

During the 18th and 19th centuries, the Chesapeake Bay supported the second greatest caviar fishery in the United States. However, by the end of the 19th century, high harvest rates drastically reduced the abundance of Chesapeake Bay sturgeon.
- Combined effects of overfishing and deterioration of habitat have caused Atlantic sturgeon to decline to the point of extirpation in the Chesapeake Bay (Secor et. al. 1997). A small spawning population exists in Virginia’s James River and York River but spawning is not known to occur in Maryland waters.
Habitat
- Adult Atlantic sturgeon are anadromous fish that spend the majority of their life at sea and only enter freshwater in the spring to spawn.
- Sturgeons are river-specific, that is, each major river along the Atlantic coast appears to have a discrete spawning stock and adults return to their natal river to spawn.
Spawning
- Atlantic sturgeon are slow-growing and late-maturing anadromous fish that migrate from the ocean into the coastal estuaries and rivers to spawn.
- Atlantic sturgeon will ascend tributaries to spawn in tidal freshwater in May or June when temperatures reach approximately 64oF.
- Males mature in 10-20 years when they are approximately 5 feet and 90 pounds.
- Females mature in 15-30 years at 6 feet and 160 pounds.
- Females spawn only once in a 2-6 year period, so recruitment is very low even though individual females produce up to 2 million eggs.
- These large, black eggs are broadcast into the water, fertilized by males, and sink to the bottom, attaching to substrate.
- Juveniles will spend several years (1-6) in the freshwater of some large rivers or they may move down into more brackish waters near the river mouth before becoming migratory.
- As sub-adults, they will then move into coastal and continental waters where they grow and mature.
- Little information exists concerning the movements of Atlantic sturgeon once they reach the ocean.

STURGEON IN THE OVEN WHOLE

STEPS OF COOKING
- Step 1. Let’s prepare all the necessary ingredients for cooking. Lettuce leaves will decorate the sturgeon when served. Therefore, you can take any of your choices.
- Step 2. First of all, we will defrost the fish if it is not freshly caught. This is best done in the refrigerator, which will allow it to thaw in the best possible way. Fish of this species are rather slippery due to a large amount of mucus. And with ordinary water, it will be done with great difficulty. To clean it without much effort, we need regular salt and paper napkins. We take salt in our palms and pass it along the fish’s body from head to tail.
- Step 3. Wipe the collected mucus with salt with a paper napkin. Continue this until the fish is completely free of mucus. Remove the scales from it, but I left large thorns. They add a unique beauty to the ready-made fish. Now we will thoroughly wash the sturgeon and dry the paper towels.
- Step 4. Cut the abdomen and remove the insides and clotted blood along the ridge (Vizag). We also remove the gills. This must be done without fail so that the fish does not acquire a bitter taste after cooking.
- Step 5. Wash and dry green onions and parsley. Chop finely.
- Step 6. Cut the lemon in half. We remove one part. We will need it a little later for decoration. Cut off the zest from the other half and set it aside for now. Cut the zest into thin strips and add to the chopped greens.
- Step 7. Add mayonnaise and mix.
- Step 8. Salt and pepper the sturgeon outside and inside the belly. Fill the abdomen of the fish tightly with the resulting mass and fix it with toothpicks. Please note that her skin is quite thick, so I advise you to make preliminary punctures with a knife.
- Step 9. Lubricate the foil with some vegetable oil. Peel the onions and cut them. Place the bow on the foil along the length of the fish. This will be our vegetable pillow, which will prevent our sturgeon from sticking to the foil in the future.
- Step 10. Carefully transfer the fish to the foil and lay it belly down on the bow. Cut the delayed lemon with zest into thin half-rings. If the lemon is large and the fish is not very large, then cut the half rings in half again. We will make shallow cuts on the back, insert lemon slices into them and the gills. We’ll remove the rest for decoration.
- Step 11. Squeeze the juice from the leftover lemon after cutting the zest. Mix vegetable oil with lemon juice and grease the sturgeon thoroughly.
- Step 12. Carefully wrap the sturgeon so as not to tear the foil. Pour a little water on a baking sheet or like mine in a large baking dish and put the fish.
- Step 13. Put the mold in a hot oven and bake the sturgeon at 200 degrees for about 30 minutes. In general, the cooking time for sturgeon depends on its size and weight. It takes up to 30 minutes for small fish and up to 1 hour for large fish.
- Step 14. Take the sturgeon out of the oven and let it stand for 5-10 minutes. Then carefully, inside hot steam, free the fish from the foil. Decorate the plate with lettuce leaves, the remaining slices of lemon and onion. We transfer the sturgeon to a plate and, depending on preference, serve it hot or cold.

COOKING TIPS
When cooking a dish baked in foil, take into account the peculiarities of your oven and be guided by the cooking time for it, not according to what is written in the recipe. If you cook a dish for the first time, follow a few helpful tips:
- divide the total cooking time by 4
- every quarter of the total time, open the oven and check the degree of readiness of the dish
- don’t be afraid to unfold the foil for a more accurate check
- in order to unroll the foil more conveniently, always leave a “seam” on top of it
- if you wish, you can determine the degree of readiness without unrolling the foil by making one or two punctures in it with a toothpick
Remember, the quality of the foil also matters.

Jellied Sturgeon
Ingredients:
- sturgeon – 1,8 kg;
- carrots – 200 g;
- onion – 150 g;
- olives (boneless) – 100 g;
- egg – 2 pieces;
- parsley (fresh) – 1 bunch;
- gelatin – 25 g;
- allspice – 10 g;
- parsley root – 5 g;
- salt – to taste.
Preparation Scheme
- To cut up sturgeon. To do this, the entrails are removed from the fish, and then the carcass is rubbed with salt (in 5 minutes). After that, the product is washed with water, the fillets are separated from the ridge, the fins, tail and head are cut off.
- Pour the trim cold water, put on fire. Boil 3 minutes. Then drain the waste fluid into the sink.
- Put “recycled” in a pan with fresh water, bring to a boil. After that, add carrots and onions (pre-sliced) to the broth. Mixture to simmer 30 minutes on low heat, constantly removing the foam.
- Remove from the broth head, spine, tail.
- Place the fish fillets again in the broth, add salt, spices. Boil until cooked (15 minutes).
- Put the finished meat in a pot for the filler, and strain the broth through a fine sieve.

- Dilute the gelatin in 100 ml of water and then pour into the broth. Heat the mixture to 90 degrees.

Sturgeon eggs side effects
